Raju Karthikeyan is a famous chef who founded Madurai Mutton Curry, that has several branches across the city. I interviewed him regarding the food preparations for Christmas. In his interview, he shares the trick of adding magic to your Christmas dishes!
“All over the world, the main dish prepared for Christmas is Turkey Briyani. People across the globe, love this dish and prepare it fondly for Christmas. However, in India, especially in the south, Mutton Briyani or Chicken Briyani is highly famous dishes. For the people who are in coastal areas, the seafood plays an essential role,” explains RK.
THE SOUL DISH OF CHRISTMAS…
“Of course, the cake baking and wine preparation form the crux of Christmas dishes. In that way, these days, in the hustles and bustles of city life, people do not devote much time in cake preparation. Also, those who wanted to do it easily go for readymade baking powders, etc. Christmas comes once in a year, so you must pass on this tradition to the next generation. So, I would request people to spend good time in cake preparation and do it in our very own traditional way,” says the Chef.
The enthusiast further says, “Normal cake baking is far different than Christmas cake baking. Usually, normal cake baking is done at an average of 20 minutes. But for the Christmas cake baking, it takes a lot of time. The plums are soaked in wine long before the actual cake preparation process starts. Anytime, the cakes that are prepared traditionally are best.”
DESSERTS PLAY THEIR WAY
“No desserts are new. It is all about how chefs/people introduce it from one part of the world to another or how innovative they are when it comes to a combination of items. The western influence in the cooking style of Christmas dishes is more,” the Chef points out.
“Pudding is one dish that always stands first among Christmas desserts. The process is also simple that the egg yolk is mixed with cream. You can add sugar or milkmaid and then you should steam it and add the toppings as you wish. If you are conducting Christmas parties, your guests will undoubtedly love this dish,” he states.
RK also says, “One of the desserts that people think that they can’t do in restaurant style is Falooda. The dessert is made of Basil seeds, Jelly, Ice creams, Vermicelli, fruits and more. At home, the same can be prepared with slight alterations. It can be made using fruits, cheese cubes, pasta, and condensed milk. It is quite easy. It is not that you should stick to these items. You can add in other items according to their creativity.”
